A chilli recipe using Quorn® mince, very tasty! Serves 2 or 3 depending on how hungry you are, you can double up on ingredients to make more.

  • 1 onion, chopped
  • 3 cloves garlic, peeled and crushed
  • 1 red or green pepper, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon chilli powder
  • 1 teaspoon cayenne pepper
  • 1 tin chopped tomatoes
  • 3 tablespoons tomato puree
  • 150ml vegetable stock
  • 1 teaspoon caster sugar
  • 1 teaspoon marjoram or oregano
  • 250g Quorn® mince
  • 1 tin kidney or mixed beans
  • fresh chillies, dried chilli flakes or chilli powder, to taste (optional)
  • salt and pepper to taste
  • chopped fresh coriander leaves for garnish

  1. Heat a little oil in a large saucepan pan over medium heat, add onion, garlic and pepper and cook for a few minutes till the onion is soft.
  2. Add cumin, paprika, chilli powder and cayenne, cook for 2 minutes, stirring. Add tomatoes, puree and stock, along with sugar and marjoram/oregano and chopped chillies if desired, and simmer for a few minutes.
  3. Add Quorn® mince and beans, cook, covered, for 10 to 15 minutes on low to medium heat, stir every couple of minutes. Taste and add salt and pepper as required.
  4. Ready! Garnish with coriander (if using) and serve with rice and/or wedges.
