Bake the kapia pepper over high heat, on the stove flame or in the oven, then place in a bowl, salt and cover. After approx. Peel and finely chop for 20 minutes.

All allies, yellow onions, green onions, leeks and garlic, clean and then chop coarsely, put to harden with oil and a little water, covered over low heat, approx. Ten minutes.

Meanwhile, clean the mushrooms and cut them into quarters.

The bell pepper is washed, cleaned and finely chopped.

After the onion mixture has become translucent, add the diced bell peppers, mushrooms and baked kapia pepper. Season with salt, pepper and paprika, add enough wine to cover them, then leave to cook, uncovered for approx. 25 minutes on medium heat.

Stew is served hot with your favorite garnish, polenta, puree, rice or, why not, fresh bread.
