A granita is typically made with sugar, water, and flavorings. This one has natural sweetness and a kick.


  • 1 jalapeño
  • 5 cups fresh mango
  • 3 ounces dark Cruzan rum
  • Pinch of sea salt


To start, place a 13-by-9-inch Pyrex pan in the freezer. Next, roast the jalapeño in an open flame until totally charred. Once the pepper is charred, roll it into a paper towel and set aside.

Clean mangoes and purée the fruit. Skin and seed the jalapeño, add it and the rum to the puréed fruit. Purée all the ingredients until incorporated.

Pour the mixture into the Pyrex and put into the freezer. Check on the mixture in 30 minutes. Ice crystals will form on the top and around the sides of the pan. Use a fork to break up the crystals. Incorporate them back into the purée. Repeat this step until the purée is frozen.

Serve with a pinch of sea salt and pair with Terre Da VinoLa Gatta Moscato d'Asti.

Champagne mangoes are about 1/2 the size of a Tommy Atkins, and are a golden yellow color. These mangoes are super sweet and delicious. They start to appear in stores mid to late summer. If you find them, buy them.

If you have frozen mango slices in your freezer, you can get a similar result by processing them from frozen with the sugar and lemon juice + 1/2 cup of water. Try it!

I seriously want to get to someplace warm and tropical. This cold wet weather is bringing me down. How about the Caribbean? Mangos? Rum? Perfect! Since I can’t actually go there… I got out the Mango Rum Cake Recipe and baked this cake instead. It’s almost the same as being there (no it isn’t, but I’m pretending so I feel better).

The basic recipe has a modest amount of rum but in the notes you will find a out how to add a soaking of rum. You can choose…. depending on how delusional you want to be to experience the Caribbean in your kitchen…(and of course, consider if you are feeding children).

Added bonus, this is an easy recipe to throw together (it uses cake mix… sshhhhhhh) The cake mix will need some fixing you will need a sieve for this. (Toss the little hard greebly bits out). For those of you who are on a diet, you can lighten the cake a bit by replacing the 3 eggs with 4 beaten egg whites. Of course, this means you can have 2 or 3 pieces of cake, which might be sort of counter productive….

If you live in a place where Mangos are hard to come by, you can substitute Peaches (even canned ones) for the Mango. Make it easy on yourself….

Recipe Summary

  • 1/4 cup freshly squeezed lime juice plus 1 tablespoon (3 limes)
  • 1/4 cup dark rum
  • 3 tablespoons dark-brown sugar

  • 32 medium shrimp, peeled and deveined (tail on)

  • 1 ripe but firm mango, peeled and sliced lengthwise into 8 slivers, each about 1 inch thick
  • 2 tablespoons vegetable oil, plus more for grates
  • 2 bunches watercress (about 12 ounces), tough stems trimmed

Make glaze: In a small saucepan, combine 1/4 cup lime juice, rum, sugar, and ginger bring to a boil over high heat. Reduce heat simmer, whisking occasionally, until slightly thickened, about 3 minutes. In a small bowl, whisk together cornstarch and 1 tablespoon water stir into lime-juice mixture. Cook, stirring, until thickened, about 30 seconds. Remove from heat let cool.

Thread shrimp onto 8 skewers, using 4 shrimp per skewer. Season on both sides with salt and pepper. Thread mango slivers onto 4 skewers, using 2 pieces per skewer. Brush shrimp and mango all over with glaze.

Heat grill to medium-high oil grates. Place shrimp and mango skewers on grill cook, turning once, until blackened in spots and shrimp are opaque throughout, 3 to 4 minutes.

In a large bowl, whisk together remaining tablespoon lime juice with the oil season with salt and pepper. Add watercress toss to coat.

To serve, divide watercress among four plates top each with 2 shrimp skewers and 1 mango skewer.

Mango-Rum Iced Tea

In a medium saucepan, bring the water and sugar to a boil. Add the tea bags, remove the pan from the heat, and let steep for 5 minutes. Discard the bags and let the tea cool to room temperature.

Transfer the cooled tea to a pitcher, add the rum, mango, and the lime and orange slices. Cover and refrigerate until the tea is cold and the flavors have melded, at least 2 hours and up to 24 hours.

To serve, pour the tea into tall glasses filled with ice cubes and garnish with fruit from the pitcher.
