I would probably have prepared this recipe as an appetizer for a lunch with friends. But, in these conditions, when everyone stays at home, I prepare common recipes with my friends and we go live on WhatsApp to sit at the table together. For this roll I used fresh spinach which I scalded after washing it very well beforehand (leaf by leaf under running water). If you do not like the stems you can remove them. If you have baby spinach, it should not be scalded, just chop it. But I made sure that by scalding (an operation called bleaching) my spinach retains its aroma and nutrients, so it stayed in hot water for a while, then I drained it and put it in very cold water.

150 g scalded spinach well drained
