We divide the dough into 2 pieces, one leaving it a little bigger. From the larger piece we stretch a thin sheet enough to cover a 20 cm shape (bottom and edges). Put the dough in a greased form with a little oil and press with your fingers to place it well on the edges. With the help of a fork, small holes are made in the bottom of the tart. We put the filling and from the second piece of dough we spread another sheet enough to cover the filling well. We squeeze the edges with our fingers to join them and make a small cut in the middle of the tart.

Beat the yolk with the milk and with the help of a brush grease the entire surface of the tart.

Put it in the preheated oven at 200ºC for 30-40 minutes or until browned.

Recipe of chicken tart or chicken quiche is one of my favorite tarts in the salty version. I really like the combination of chicken with smoked cheese and baked peppers. If I add olives, it's absolutely perfect. In the previous recipe we showed you how to prepare tart crust . With its help you can prepare strawberry tart, lemon tart or with any other fruit. However, I couldn't help but show you a salty, tasty and filling tart version.

Chicken tart or quiche with chicken, as it is called by the French, is an extremely tasty dish and very easy to adapt according to your own tastes. You can make it with any kind of ingredients you want, with peas, leeks, broccoli, spinach, cauliflower. It is important to keep the mixture of eggs and sweet cream and necessarily the cheese. It can also be of several kinds. You can use Cheddar, Guada, Emmental, Gruyere or any other cheese with a strong taste but which melts nicely in the oven. Honestly, I prefer smoked cheese, which is absolutely divine in this recipe.

And because I told you it's an easy to customize recipe, you can use any kind of meat or you can exclude it altogether. You can use fish or mushrooms instead of meat, or why not leeks sautéed in olive oil. If you still have dedicated carnivores in the family, as I have, you can use any kind of meat you want. If you have leftovers of steak or baked chicken in the fridge that no one eats, you can use them with confidence.

Bake the chicken tart until the filling has set and has the consistency of a jelly. But it should not be overcooked because it will no longer be creamy. Once baked, the tart should be allowed to cool to room temperature, or at least for an hour to warm. I really like it from the fridge. Take a slice of chicken pie with you to work for a delicious lunch, or put it in the little ones in the school package. Take it to a picnic, or when you want to give someone something cooked by you and I guarantee you will do it again and again and again.

Fresh dough for salty tarts

I started with the dough. In a bowl I placed flour, cold butter and salt and crushed them between my fingers until I got a kind of sand. I added the egg yolk (I kept the egg white) and mixed it. The dough needs moisture so I put a teaspoon of cold water. It's like he's starting to bond. I added another drop of cold water and managed to form a ball of dough. DO NOT worry! It is processed short, just enough to compact! We do not want to develop the gluten network that makes elastic and rubbery dough. In the pictures you can see that you can work with a blunt knife or a processor with knives.

I let it cool for 15 minutes. After this time I placed it on the lightly floured worktop and I spread the dough in a circular shape, larger than my baking form (which is 28 cm in diameter).

I heated the oven to 180 C (medium to high for gas). I placed the dough sheet in the shape of a tart (or other heat-resistant form with a diameter of 26-28 cm) and I pricked it with a fork. I made sure that the walls of the form were covered with dough. I baked the empty dough for 10-12 minutes at 180 C (preheated oven). It should be lightly browned, not completely ripe.

Quiche filling

In another bowl I placed the sweet cream together with the 3 whole eggs and the remaining egg white from the dough. I beat the composition with a whisk and seasoned it with salt and pepper. In the end I laughed and a good handful of cheese in it.

Meanwhile, the top was pre-baked and I was able to place the frozen broccoli and cauliflower bunches on it.

I spread them evenly on the surface of the tart and poured the cream sauce with eggs over them. I spread a few pieces of hard goat cheese on top. Mmm .. what a great taste and aroma they have!


Vegetable tart

Ingredients Vegetable tart
1 zucchini
1 red pepper
200g cherry tomatoes
3 green onion threads
1 jar of mushrooms
70g telemea
4 eggs
5-6 tablespoons sour cream
1 puff pastry dough
Salt
Pepper
Parsley

Preparation Vegetable tart
Peel a squash, grate it and slice it into thin slices. Cut the green onions and mushrooms into small pieces and put all the vegetables in a bowl and mix them. Add the telemeau given on the small grater and add salt, pepper and parsley, to taste.
Spread the dough with the rolling pin and place it in a pan greased with butter and lined with flour, then prick it with a fork from place to place. Pour the vegetables over the dough and add beaten eggs with sour cream. Place the cherry tomatoes on top and place the tray in the preheated oven at 180 degrees C, for 55-60 minutes, until the tart is nicely browned. Let it cool a bit, then slice it and serve.
